| one pound | chicken breast |
| one | onion, chopped |
| 3 T | olive oil |
| 4 cloves | garlic, minced |
| 4 C | homemade chicken broth |
| 2 C | water |
| 2 | tomatos, chopped |
| 3/4 C | homemade salsa |
| one | green pepper, chopped |
| one t | dried basil, crushed |
| one t | dried oregano, crushed |
| to taste | habeneros, minced |
| 2 C | uncooked rotini pasta |
Cook chicken and onion in hot oil until chicken is no longer pink. Remove and set aside chicken to cool. Add garlic and cook one minute more.
Add remaining ingredients except pasta and bring to a boil. Stir in pasta and chopped chicken and return to a boil. Reduce heat, cover and simmer until rotini is done, about 15 minutes.
Serve and pig out. This soup is low calorie, low fat and low sodium but absolutely delicious!
