Tomato-Florentine Soup

16 ozfrozen mixed vegetables, thawed
12 ozfrozen chopped spinach, thawed
one 14 1/2 oz can  No Salt Added whole tomatoes, chopped, with juice
2 Tred wine vinegar
2 tgarlic powder
3 Chomemade beef broth (or low sodium boullion with water)
one Tsugar
one Tleaf basil, crushed
onebay leaf
to tastefreshly ground black pepper
to tasteleaf oregano, crushed or other herbs and spices

Combine ingredients in medium saucepan and bring to a boil

Reduce and simmer at least 10 minutes, longer if you like

Like chili, this is better the second day
