Macaroni Soup

oneonion, chopped
3 stalkscelery, chopped
3 clovesgarlic, minced
one Cuncooked macaroni
6 Chomemade chicken broth
16 ounce can  green beans, rinsed and drained (fresh, steamed green beans are better)
4 TNo Salt Added tomato paste
3carrots, thinly sliced
one Cdry kidney beans, cooked (slightly undercooked is better)
3/4 tleaf oregano, crushed
1/2 tleaf basil, crushed
2 Tolive oil
2 Tolive oil

Cook macaroni. Drain and combine with 2 T olive oil so it doesn't stick together. Set aside

Sauté onion, celery, and carrots in 2 T olive oil until almost tender

Add garlic and cook one minute more

Add macaroni, and all other ingredients

Jon's note: Here, I add a couple of minced hot peppers (habaneros) to give it some zing!

Bring to a boil, reduce heat, cover and simmer 30 minutes
