| as needed | olive or peanut oil |
| one pound | ground round |
| one | onion, chopped |
| 2 T | homemade chili powder |
| 1/2 C | No Salt Added corn, drained and rinsed |
| one 14 1/2 ounce can | No Salt Added stewed tomatos, drained |
| one t | sugar |
| 1/2 t | leaf oregano, crushed |
| 1/4 t | freshly ground black pepper |
| 3 ounces | sharp cheddar cheese, grated |
| 4 ounces | No Salt Added Corn Chips or Nacho Chips |
Heat oil in skillet. Add beef and onion, breaking up beef. Fry until beef is browned, then drain fat
Stir in oregano, chili powder, and black pepper. Mix well
Stir in corn, tomatos, and sugar. Mix well
Bring to a boil, reduce heat, cover, and simmer 15 minutes
Uncover and cook to the consistency you like. Add cheese and corn chips, stirring until cheese melts
Serve over torn lettuce, with corn or nacho chips
