| one pound | boneless chuck or round steak, braised * |
| 1/2 C | olive oil |
| 3 T | white vinegar |
| one T | homemade chili powder |
| one t | onion powder |
| one t | sugar |
| 12 ounces | dry kidney beans, cooked |
| one | green Bell Pepper, cut into short strips |
| 4 ounces | sharp cheddar cheese, grated |
* To braise: place meat in saucepan with tight fitting lid. Add 2-3 tablespoons liquid per pound of meat. I use Angostura soy sauce mixed with liquid smoke, Tabasco and water. Heat to almost boiling, cover with lid, reduce heat to medium-low and cook for 20-30 minutes, or until meat is done. An easy way to cook steak and have it come out moist
For marinade: In large bowl, stir together olive oil, white vinegar, chili powder, onion powder, and sugar
After steak cools enough to handle, chop into slightly smaller than bite-sized pieces
Combine steak, kidney beans, grated cheese, and green pepper strips
Combine all ingredients. Cover container and shake well to mix. Chill before serving
Serve with No Salt Added nacho chips
