| 16 oz | rotini or ziti pasta |
| one | green Bell pepper, finely chopped |
| one | yellow or red Bell pepper, finely chopped |
| one | onion, finely chopped |
| 1 1/2 C | balsamic or red wine vinegar |
| one to 2 T | brown sugar |
| 1/8 C | olive oil |
| 2 T | salt-free garlic and herbs seasoning mix (like Mrs. Dash) |
| 8 to 16 oz | frozen Italian-style mixed vegetables, lightly cooked |
Combine vinegar, seasoning, brown sugar, and oil. Shake well
Add the dressing to the chopped onions and peppers. Let marinate while pasta is cooking
Drain and rinse cooked pasta under cold water. Add frozen vegetables to pasta and stir
Stir in the dressing, onion, and peppers
