Lemon MeltAways

one C (2 sticks)  No Salt Added butter or margarine, softened
1/2 CConfectioners' (powdered) sugar
2 1/2 Cfine cake flour
one Tlemon flavor extract (substitutions)

Substitutions : Possible substitutes for lemon extract include: peppermint extract, rum extract, vanilla extract, 1/2 teaspoon cinnamon, 2 teaspoons grated orange rind, 1/4 teaspoon nutmeg, or 1/8 teaspoon cloves

Mix together margarine, powdered sugar and lemon extract

Blend flour into margarine mixture. Drop by teaspoonfuls onto an ungreased baking sheet

Bake in a 375° oven for 7 to 8 minutes until set, but not brown

While cookies are still warm, dip the tops into powdered sugar and cool. An extra baking sheet directly under the baking sheet with the cookies during cooking keeps the cookies from becoming too brown
