Soda Cracker Bars

1 1/2 C  sugar
2/3 Cevaporated skim milk
one tvanilla extract
6 Tpeanut butter
2/3 Cshredded coconut
38Low Sodium soda crackers

In a large saucepan, combine sugar and evaporated milk. Bring to a boil over medium heat and boil for 3 minutes; remove from heat

Add vanilla and peanut butter to sugar mixture. Mix well

Add coconut and crushed soda crackers. Stir well

Cool slightly. Press mixture into a lightly buttered 8 x 8 glass baking dish. Refrigerate for at least 2 hours.

Cut into small squares and serve
