| one 14 1/2 oz can | no salt added tomatos, chopped |
| 1/2 C (packed) | fresh cilantro leaves, chopped |
| 2 T | red wine vinegar |
| 1/4 C | onion, minced |
| 1 - 2 | jalapeno chili peppers, seeded & minced |
| One t | olive oil |
Mix all ingredients together
This salsa will perk up cooked chicken, pork, or fish. It is best when eaten the same day, but will keep 2 days refrigerated in a covered container
