Use whole heads of garlic for roasting. With stout, sharp chef's knife, cut off top of garlic head all at one go.

Pour olive oil to cover bottom of glass baking dish. Place garlic cut side down in oil in baking dish. Individual cloves work too!

Pour some water in so nothing dries out during cooking. Bake at 350° F for about 30 minutes. Let cool! When cool, grab the uncut end of garlic heads and squeeze - the roasted cloves will squirt right out, ready to use.
